Whatever you say it is. Most businesses set it as evenings from close of trade, plus weekends and public holidays, and some run it from mid-afternoon when the last person leaves the desk. Coverage can also be partial — overflow during the day when your lines are busy, then full handling once the office is empty. The hours are configuration, not a fixed package.
Will it wake me up for every call?
No, and an after-hours service that does is worse than none — you stop answering it within a fortnight.
